Ingredients

  • 1 pound Penne Rigate
  • 2 tblsp. Olive Oil
  • 2 tblsp. Butter
  • 1/2 pound Andoullie Sausage, diced (can substitute turkey or chicken sausage)
  • 4 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Onion, chopped
  • 2 ribs of Celery, chopped
  • Salt and Black Pepper to taste
  • 1/2 tsp. Cayenne Pepper
  • 1 tsp. Paprika
  • 1 cup Beer
  • 2 tblsp. Flour
  • 1 1/2 cup Chicken Stock
  • 1 can Crushed Tomatoes
  • 2 Bay Leaves
  • 2 Chicken Breast, cut in to small pieces
  • 1/2 pound Shrimp or Crab meat
  • 1/4 cup Heavy Cream
  • 2 Scallions, chopped for garnish

Preparation

Step 1

Cook pasta according to package directions. While the pasta is cooking, heat large skillet on medium high and add olive oil and brown sausage. Remove sausage with a slotted spoon and reserve. Add butter, bell pepper, onion, celery and garlic to skillet. Saute until tender 5-6 minutes then add flour and cook another 2 minutes. Then add beer and reduce for 2 more minutes. Then add chicken, bay leaves, chicken stock, tomatoes, paprika, cayenne, salt and pepper. Then add shrimp. Once shrimp and chicken are tender return sausage to the skillet then add heavy cream. Cook 5 more minutes, then add pasta and toss. Top with scallions for garnish.
