Ingredients

  • 1/4 cup unsalted butter
  • 6 tablespoons brown sugar (packed)
  • 3/4 teaspoon ground cinnamon
  • 6 peaches, peeled, halved, pitted, each cut into 8 wedges
  • 2 teaspoons vanilla extract
  • 2 tablespoons dark rum
  • Vanilla or peach ice cream

Preparation

Step 1

1. Melt butter large skillet. Add sugar and cinnamon, cook until sugar begins to dissolve (mixture may clump together).

2. Add peaches and vanilla. Sauté until peaches are tender, about 4 mins.

3. Remove skillet from heat. Stir in rum. Return skillet to heat and cook until sauce thickens, stirring frequently, about 2 mins. Spoon over ice cream.

Notes: Quite good. Used about 2.5 tbsp butter and cut back the sugar a bit.
