Ingredients

  • 2 1/2 cups (350 grams) blueberries, fresh or frozen OR frozen Four-Berry Blend
  • juice of 1 lemon wedge
  • 1/2 tablespoon sugar, honey or maple syrup
  • pinch of kosher salt
  • 1 teaspoon vanilla extract (Optional)
  • 12 oz. 2% Greek yogurt
  • 80 grams granola (nutrition content based on Dorset Cereal's High Fibre granolas)
  • 20 grams Cacao nibs

Preparation

Step 1

Combine berries, lemon juice, sugar and salt in a non-stick saucepan. Bring to a boil, reduce heat slightly and simmer until softened and thickened - about 8 minutes for fresh berries, 12 minutes for frozen. Remove from heat, stir in vanilla and allow to cool.

Divide cooled berry mixture among four small, squat mason jars. Top each with 4 oz. yogurt. Cover and refrigerate. Measure 30 grams each of granola into 4 separate containers.

At work, stir granola into yogurt/blueberry mixture and eat. (*Don't try adding the granola at home - by the time you get to work, it's all soggy)
