Ingredients

  • Blueberry Sauce:
  • 2 cups blueberries
  • 1/2 to 1 cup sugar
  • Whipped Cream:
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • Waffles:
  • 4 eggs, yolk and whites separated
  • 3 cups spelt flour
  • 3-4 tablespoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 2 teaspoons sugar or honey
  • 2/3 cup vegetable oil

Preparation

Step 1

Make Blueberry Sauce:

Combine blueberries and sugar in a small saucepan. Heat until sugar is dissolved and blueberries start to pop.


Make Whipped Cream:

Whip heavy cream with powdered sugar until stiff peaks form.


Make Waffles:

In a medium bowl beat egg yolks until pale. Sift in flour, baking powder, and salt. In a small bowl whisk together milk, honey, and oil. Add to the dry ingredients. Beat egg whites until foamy but still wet. Fold into waffle batter. Pour 1/2 cup batter onto waffle griddle and heat until cooked throughout. Keep finished waffles warm in a 200 F oven. Top waffles with blueberries and whipped cream.
