Ingredients
- 2 c dried rice
- 1/2 pkg meatless bacon
- 16 oz black-eyed peas
- (1 c water)
- 15 oz can stewed tomatoes
- 4 oz can tomato paste
- (2 T ketchup)
- (1/2 t thyme)
- (1 t seasoned salt, 1/2 t pepper)
- (1+ t hot sauce)
- Romaine lettuce leaves, torn
- 1 cucumber, peeled and sliced
- 1 chopped tomato
- (Favorite dressing)

Preparation
Step 1
Prepare rice according to package directions. Brown bacon. Heat peas in saucepan w/ 1 c water. Drain. Add bacon, tomatoes, tomato paste, ketchup, thyme, seasoned salt, pepper, hot sauce in lg skillet. Fry for about 10 min. Add cooked rice. Stir. Bring to boil. Heat for apx 10 more min. If too dry, add ½ c water. Let simmer on low till ready to serve.
Prepare salad. Top w/ favorite dressing
