Ingredients

  • Pkg flour tortillas
  • Pkg sliced mushrooms
  • 1 c shredded cheddar cheese
  • 6 + oz spinach
  • 1 c prepared salsa
  • (oil)
  • (Salt/pepper)
  • 10 potatoes, chopped
  • (Olive oil, salt & pepper)

Preparation

Step 1

Divide ingredients equally among tortillas.
Spoon salsa over top of mushrooms, cheese
and spinach. Sprinkle about 1 t of oil over each.
Salt and pepper to taste. Roll up tortilla tightly.
Preheat oven to 450 o F. Wash potatoes and
place in saucepan. Add approx 2 c of water.
Cook over med heat until potatoes are just
tender. Drain and add olive oil, salt & pepper.
Place on shallow baking pan and place in oven.
Bake for apx 45 min or until golden brown.
