Broccoli and Cheese Baked Potato

- 4 large red potatoes
- 2 small heads broccoli, cut into small florets
- 4 ounces shredded colby jack blend, or favorite shredded cheese
- 1/2 cup milk
- Kosher salt
- Freshly cracked black pepper

Step 1
Preheat oven to 450 degrees F.
Pierce the skin of the potatoes with a fork, once or twice on all sides. Bake the potatoes for 45 minutes to 1 hour, or until tender throughout the potato. Check the tenderness by piercing with a fork or knife. The texture of the potato should be same tenderness throughout.
Meanwhile, in a saucepan with a steamer basket, steam broccoli for 4 to 6 minutes, until tender but still crisp. Also in a small, nonstick skillet over medium heat add milk and cheese. Cook until melted.
Once potatoes are tender, broccoli is steamed and cheese is melted, cut potatoes and divide cheese and broccoli between the potatoes. Sprinkle with a pinch of salt and pepper.
