Ingredients
- 2-3 organic apples (1 lb.) washed and diced small
- 1 tablespoon maple syrup
- pinch salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla
- 1/4 cup water (or more as needed)
- 18 oz. 2% Greek yogurt
- 120 grams granola (nutrition content based on Dorset Cereal's High Fibre granolas)
- 4 tablespoons (30 grams) Cacao nibs

Preparation
Step 1
Combine apple ingredients (except vanilla) in a medium heavy saucepan. Cover and cook over medium-low heat 45 minutes or until apple is tender, stirring occasionally and adding more water as needed to keep from drying out. Remove from heat and stir in vanilla and set aside to cool.
Spoon cooled apples into the bottom of four squat mason jars. Top each with 4 oz. yogurt. Pack 30 grams granola per serving separately.
At work, stir granola into yogurt and eat. (*Don't try adding the granola at home - by the time you get to work, it's all soggy)
