Ingredients
- 1/4 lb butter
- 1 1/2 cups long grained rice
- 1 (3 oz) jar sliced mushrooms
- 1 (5 oz) can water chestnuts
- 1 tender inner celery rib, finely chopped
- 1 (10 1/2 oz) can condensed onion soup
- 2 tbs dry sherry
- 1/2 tsp curry powder
- 2 or 3 drops hot sauce
- salt, if needed

Preparation
Step 1
Melt butter in skillet. Add the rice and stir well to coat. Drain and reserve the liquids from the mushrooms and chestnuts. Add mushrooms, thinly sliced water chestnuts, and celery, to rice in skillet. Saute, stirring gently, until rice is golden brown and begin to pop.
Add soup, sherry, curry powder, and hot sauce to rice mixture in skillet. Stir and mix well. Add reserved liquids from mushrooms and chestnuts. Correct seasoning-salt may nor be necessary-according to taste. Bring to a boil and pour into a 2 1/2 quart oven proof casserole dish. Cover and bake in a preheated 325 degree oven for 45 minutes. Remove from oven and allow to stand 15 minutes before serving.
