- 3 Celery stalks, diced
- 1 small Onion, diced
- Pepper to taste
- 2-3 Chicken Breasts, Cooked
- 1 C. uncooked Long grain Rice
- (optional: carrots)

Step 1
In a large saucepan, combine broth, celery, onion, salt & pepper; bring to a boil. Reduce heat, cover & simmer 10 minutes. Increase temp & add chicken & rice, bring to a boil. Reduce heat, cover and simmer 25 minutes.
