Chicken Piccata

This chicken recipe is from the Ravinia Cookbook that Vera and Keith gave to us for our wedding. When we were in high school, we often went to Ravinia for concerts, like Jackson Brown! This recipe is super easy and delicious. It makes a moist and flavorful chicken breast. Serve with rice and broccoli.

Ingredients
- 2-3 boneless, skinless chicken breasts
- 1/3 cup flour
- sea salt and pepper to taste
- 1/4 cup extra virgin olive oil
- 1/2 cup chopped onion
- 1 lemon sliced
- 1 cup chicken broth
- 2 tablespoons parsley

Preparation
Step 1
Dredge chicken in flour and season with salt and pepper. Heat oil in large skillet and saute chicken 5 minutes on each side until brown. Remove chicken and add onion. Saute until the onion is soft. Return the chicken to pan layering on top of onions. Top chicken with lemon slices and add the chicken broth. Simmer uncovered for 5 minutes. Sprinkle with parsley.
