Ingredients

  • Salad:

  • 3

    heads romaine, chopped

  • 1

    lb roasted chicken, chopped

  • 1/4

    lb gorgonzola, crumbled

  • 6

    oz bacon, cooked & crumbled

  • 1

    large apples, chopped

  • 1/2

    lemon, juice

  • Vinaigrette:

  • 2

    T. shallots, diced

  • 1/4

    cup sherry vinegar

  • 1

    tsp Djon mustard

  • 1/2

    T. whole grain mustard

  • 3/4

    c. olive oil

  • 1/2

    tsp honey

  • salt & pepper

Directions

Vinaigrette: Soak the shallts in the vinegar for 5 minutes.Whisk in the mustards and then olive oil and honey. Season with salt and pepper Salad: Place all indgredients in large salad bowl (except lemon juice). Toss with the vinaigrette and lemon juice. Salt and pepper to taste.
