Stuffed Potatoes

Ingredients
- Filling fo the Potatoes:
- 4 medium Potatoes
- 1 Tbs butter
- 1 Tbs cream
- 1 Tbs freshly grated Parmesan Cheese
- 1 tsp salt
- 1/2 tsp white pepper
- 4 Tbs olive oil
- 1 small inion, finely chopped
- 1 garlic clove, minced
- 3/4 pound ground beef
- 1/2 tsp crushed oregano
- 1/4 cup tomato sauce
- 1/4 cup water
- 1/2 tsp salt
- 1/4 tsp sugar
- 1 bay leaf
- Pinch of nutmeg
- 2 eggs plus 1 tbs of water
- 1/2 cup fine bread crumbs
- Vegetable oil for deep frying

Preparation
Step 1
Cook potatoes with peels. When done, peel and mash with the butter and cream. Add the cheese, salt and pepper and mash to blend well. Set aside.
Heat oil in skillet. Add onion and green pepper. Saute until transparent. Add garlic, beef and oregano. Mix well and cook until red disappears fro meat. Add tomato sauce, water, salt, sugar, bay leaf, nutmeg, and stir to mix thoroughly. Cover and cook until liquid is absorbed. Allow filling to cool.
Scoop 2 tablespoons of mashed potatoes and knead in hand a few seconds. Press to form indentation. Fill with a good tablespoon of filling. Cover with another scoop of kneaded mashed potatoes. Be sure to seal the filling completely with the mashed potatoes. Roll to form a smooth round ball. Repeat this until all the ingredients are used/
Beat egg and water in a wide bowl until frothy. Spread bread crumbs in a shallow platter. Dip the prepared potato balls in the egg mixture, then roll in crumbs. Deep fry to golden goodness.
