Ingredients

  • Creamy dressing:
  • 6 oz salad macaroni (1 1/3C)
  • 1 3oz can pitted olives, drained and chopped
  • 1 med tomato, peeled, seeded, and chopped
  • 1 4 1/2oz can small cooked shrimp, drained
  • 3/4 C chopped sweet pickles
  • 2/3 C sliced green onion
  • 7 hard boiled eggs, sliced
  • salt and pepper
  • 2/3 C sour cream
  • 2/3 C mayo
  • 2 T sweet pickle juice
  • 1 T prepared mustard
  • 1 t sugar
  • 1/2 t Worcestershire
  • 1/8 t hot pepper liquid

Preparation

Step 1

Cook macaroni, drain well, rinse in cold water, drain.
Combine macaroni, chopped olives, tomato, shrimp, pickle, and 1/2C onion. Prepare dressing and pour over macaroni mix, and mix well. Gently stir in most of egg slices, salt and pepper to taste, cover and refrigerate for at least 2hrs.

To serve, garnish with remaining egg, whole oives, and green onion.
