BBQ Chicken Sandwiches 1 Picture

Ingredients

  • 1 pkg Boneless Skinless Chicken Breast (3 half breasts) -- approx. 1.5 pounds
  • 1 sweet onion (diced fine) or 1 tablespoon dried onions
  • 1 cup ketchup
  • 1/4 cup packed brown sugar
  • 2 tbsp Pampered Chef BBQ Rub
  • 2 tsp vinegar
  • 1/4 tsp garlic salt or 1 clove garlic minced/pressed
  • Olive/vegetable oil
  • Cutting Board
  • 1-2 pkgs King Hawaiian sweet rolls (12 to a package)
  • Pampered Chef Deep Covered Baker

Preparation

Step 1

1. Clean Chicken so there is no fat (or it will pop) and put it into the Deep Covered Baker - big pieces on the outside
2. Pour approximately 1 tbsp oil in small bowl
3. Using a pastry brush, baste chicken with oil
4. BBQ Seasoning - shake season on chicken
5. Cover the Baker and put in microwave for 11 minutes (1.5 pounds) - (4 pieces - 13-15 minutes). Cook until done and no longer pink -- should be 160 degrees or higher

While Chicken is cooking, prepare BBQ Sauce:
1. In small saucepan, place brown sugar, 2 Tbsp BBQ rub, vinegar, onion/dried onions, garlic salt, ketchup. Mix together
2. Place over medium heat and bring to a boil, stirring occasionally
3. Keep on low heat, stirring occasionally so as to not burn on bottom, until you are done with chicken.

BBQ Chicken
1. When done, remove chicken from microwave
2. Cut chicken into chunk sizes. Using a cutting board and food chopper, chop chicken into fine pieces.
3. Return chopped chicken to Deep Covered Baker
4. Add BBQ Sauce - mix thoroughly
5. Cover until ready to serve

Slice the sweet rolls in half and scoop chicken mixture in center.

Enjoy!
