Oatmeal Cookies, Gluten, Dairy, and Refined-Sugar FREE

Ingredients
- 1 3/4 c. flour mix of your choice
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup coconut oil (melted in the microwave for 20 seconds, or until clear)
- 3/4-1 cup honey, depending on how sweet you want it
- 1 tbsp vanilla
- 2 large eggs OR 2 tbsp milled flax seed, mixed with 4 tbsp H2O
- 3-3 1/2 cups GF oatmeal.
- 1 cup raisins or chocolate chips or chopped pecans (OPTIONAL)

Preparation
Step 1
First, preheat your oven to 350. I always forget to do this until my cookies are mixed. And then I have to wait even LONGER for my cookies. So, don’t forget. Preheat your oven FIRST.
1 3/4 c. flour mix of your choice
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
Put all the dry stuff in a bowl and mix with the nearest clean fork.
1/2 cup coconut oil (melted in the microwave for 20 seconds, or until clear)
3/4-1 cup honey, depending on how sweet you want it
1 tbsp vanilla
2 large eggs OR 2 tbsp milled flax seed, mixed with 4 tbsp H2O
Mix all the wet stuff together, if you use the flax seed – make sure you really really mix it well. It takes a minute to emulsify the oil and honey together.
Mix the wet stuff and the dry stuff together. Then add:
3-3 1/2 cups GF oatmeal.
Fold in. And if you want raisins or other stuff add:
1 cup raisins or chocolate chips or chopped pecans (OPTIONAL)
I made 16 big cookies. 8 on each silpated or parchment papered pan.
Bake for 12-15 minutes.
