Chocolate Buttercream

Ingredients
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/4 cup meringue powder
- 1/2 cup water
- 1 TABLESPOON vanilla
- 1 pound 10x sugar
- 4 ounces unsweetened chocolate, melted
- 2 cups unsalted butter, softened

Preparation
Step 1
1. Wash and sanitize utensils and preparation area.
2. Assemble ingredients and equipment.
3. In a saucepan over medium high heat, combine water and sugar. Bring to a boil and cook for one minute or until the sugar is completely dissolved. Remove pan from heat and let cool to room temperature.
4. In the bowl of an electric mixer fitted with a whisk attachment, combine the sugar-water mixture with the meringue powder and salt. Let sit for five minutes.
5. On medium high speed, whip the mixture to a medium peak. 7-8 minutes.
6. Gradually add the 10x sugar until combined, 2-3 minutes.
7. Gradually add the chocolate until combined, 1-2 minutes.
8. Gradually add the vanilla and butter; whip until fluffy 3-5 minutes.
