Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 4 eggs, large
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 2 1/2 cups flour
- 4 TABLESPOONS cocoa
- 2 teaspoons baking soda
- 1/8 teaspoon salt
- 1 cup boiling water

Preparation
Step 1
1. Wash and sanitize utensils and preparation area.
2. Assemble ingredients and equipment.
3. Position oven rack in center of oven; preheat oven to 325°; grease the bottom and sides of three 9-inch round cake pans; dust pans with flour and tap out excess.
4. Sift together the flour, baking soda, cocoa, and salt into a bowl; whisk to combine; set aside.
5. In the bowl of an electric mixer, using the paddle attachment, beat the butter, sugar, and eggs at low speed until combined, 1 minute.
6. Increase speed to medium-high and beat until mixture is light and fluffy, 4 minutes.
7. Reduce speed to low and add sour cream and vanilla. Beat until combined, 1 minute.
8. Add the flour mixture in three additions mixing just until blended.
9. Add the water in three additions mixing just until blended.
10. Scrape batter into prepared pans, dividing it evenly, and smooth the tops with a rubber spatula.
11. Bake cakes for 22-25 minutes, until a pick comes out clean.
12. Cool cakes in pans on wire racks for 15 minutes; invert cakes onto the wire racks and let cool completely.
