Ingredients

  • Optional Add-in:
  • 2 cups old-fashioned oats
  • 1/2 cup rice krispies
  • 1 cup crushed graham crackers (or wheat flour)
  • 2 1/4 tsp. pumpkin pie spice (1 tsp. cinnamon, 1/2 tsp. ginger, 1/2 tsp. ground allspice, 1/4 tsp. ground nutmeg)
  • 1/4 cup oil
  • 1/4 cup brown sugar
  • 1/4 tsp. salt
  • 1/4 cup pumpkin puree
  • 3 Tbsp. maple syrup
  • 1/2 cup white chocolate chips

Step 1

Preheat oven to 325°F. Line a baking sheet with parchment paper or foil and spray with non-stick spray.

Mix dry ingredients in one bowl and wet ingredients in another. Mix the wet ingredients into the dry using a spatula until everything is well combined.

Place granola on baking sheet and bake for 20 mins then stir granola gently. Bake for another 20 minutes until golden brown and crisp. Let cool completely on baking sheet. Stir in white chocolate, if desired. Store in an airtight container for up to one week.
