Ingredients
- 1 1/2 c pecans
- 3 large eggs
- 1 banana, mashed (optional - if not using, increase pecans to 2 c)
- 2 T honey
- 1 t pure vanilla extract
- 1/2 t ground cinnamon
- 1/2 t baking soda
- 1/4 t salt
- Coconut cooking spray / butter
- Maple syrup, pecans and berries for servving

Preparation
Step 1
Finely grind pecans in a food processor to a flour-like texture. In a medium bowl, mix ground pecans, eggs, banana (if using), honey, vanilla, soda and salt. Mix thoroughly until all are well incorporated.
Lightly coat medium skillet with spray. Place over med-low heat. Ladle about 1/4 c batter into pan for each pancake. Cook until crispy on the edges and flip. Keep in warm oven until ready to serve. Repeat until all batter is used. Serve with maple syrup, pecans and berries.
