Granola Strawberry Parfait
Parfait is the French word for perfect. That's about the best way to describe the taste of this luscious low-fat, whole grain dessert - edible proof that granola is not just breakfast fare!
If you don't have 6 tall parfait glasses, use wine goblets or drinking glasses.

Ingredients
- 1.5 c low-fat ricotta
- 1/4 c Stonyfield Farm Lowfat Vanilla Yogurt
- 4-5 T strawberry jam
- 1 t grated orange zest
- 1-1.25 lbs strawberries, trimmed
- 1.5 c Nature's Path FLAX PLUS GRANOLA
- Fresh mint leaves for garnish

Preparation
Step 1
1. Puree ricotta, yogurt & jam in a food processor.
2. Stir in orange zest.
3. Reserve 6 small strawberries for garnish.
4. Cut remaining strawberries into thick slices.
5. Spoon 2T granola into each glass.
6. Top w/2T ricotta mixture & a thick layer of strawberries
7. Repeat steps 5 & 6 for the 2nd layer.
8. Garnish w/a whole strawberry & w/a few mint leaves.
9. Serve immediately or refrigerate until needed, up to 6 hours.
