Armenian Rice Pilaf

Ingredients
- Add one or more of the following ingredients:
- 4 tablespoons butter
- 1/3 cup orzo
- 1 cup rice
- 2 1/2 cups chicken broth
- 1/4 cup minced onions
- 1/2 teaspoon minced garlic or garlic powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1/4 lb. broccoli florets
- 5 ounces frozen peas
- 1 can sliced mushrooms
- 1/2 cup sliced fresh mushrooms
- 2 Tablespoons sliced green onion
- 1/2 cup cashews, almonds or pecans
- 2 Tablespoons Parmesan cheese
- 4 slices bacon cooked and chopped

Preparation
Step 1
Heat butter in 2qt saucepan until frothy. Add orzo; saute until golden, don't burn.
Add rice, stir.
Add chicken broth, stir to mix.
Cover and cook for 17 minutes on simmer.
SUBTITUTION
Substitute rice & vermicelli for;
1/2 cup brown rice
1/2 cup wild rice
1/2 cup long grain white rice
Saute brown rice, add wild rice, simmer for 25 minutes; add white rice, simmer an additional 25 minutes.
