Ingredients
- Crust
- Use a refrigerated crust
- Filling
- 6-7 apples, peeled and sliced (about 6 cups)
- 1/2 cup flour
- 1/2 cup sugar, plus more for sprinkling
- 2 Tbsp. cinnamon
- 1/2 tea. ginger
- 1/2 tea. nutmeg
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup canned or fresh chopped hot green chilies
- 1 egg

Step 1
Combine the apples, flour, sugar, cinnamon, ginger, nutmeg, lemon juice, and green chiles in a large bowl and toss. Let sit 20 minutes. Meanwhile, preheat oven to 375 degrees.
Line pie pan with crust.
Spoon filling into rust. Roll out the remaining dough and lay over the filling. Press the two crusts together around the edge, the crimp. Whisk the egg with 1/4 cup water and brush over the top crust. Cut a few slits in top crust to let steam escape. Sprinkle with sugar.
Bake, rotating the pie every 20 minutes, until golden brown, 1 to 1 1/2 hours. Transfer to a rack and let cool completely.
