Baked broccoli Cheddar rollups

  • 4 slices bacon
  • 4 oz sharp Cheddar, grated
  • 1/4 cup low-fat sour cream
  • 2 scallions, chopped
  • Kosher salt & pepper
  • 1 10 -oz pkg broccoli florets,
  • thawed and squeezed of excess moisture, then cut into 1-in pieces
  • 1 lb pizza dough (thawed if frozen)
  • Olive oil, for brushing

Preparation

Step 1

1. Heat oven to 400*. Line a baking sheet with parchment paper. Cook the bacon in a large skillet over medium heat until crisp, 6 to 8 minutes. Transfer to a paper towel-lined plate; break into pieces when cool.

2. In a large bowl, combine the Cheddar, sour cream, scallions and 1/4 tsp each salt and pepper. Fold in the broccoli and bacon.
3. Shape the pizza dough into a 14-inch circle, then cut into 8 triangles.
4.Divide the broccoli mixture among the triangles. Starting at the wide end, roll the dough around the filling (some of the filling will stick out).5. Transfer the rolls to the prepared baking sheet, brush the dough with oil and bake until golden brown, 20 to 25 minutes.
