Ingredients
- 1 corn tortilla
- 1 teaspoon olive oil
- 1 egg
- 3 - 4 tablespoons my Spicy Red Mexican Sauce or red or green salsa of choice (in a pinch)
- 30 grams Kraft Tex Mex Light or 30 grams Tre Stelle Light Feta cheese
- chopped fresh cilantro
- 1/4 ripe avocado, diced
- 1/4 cup heated black beans (Optional)

Preparation
Step 1
Heat a drizzle of oil in a non-stick skillet. Add tortilla and heat on both sides (you don't want it really crispy, just warmed). Remove to a plate.
Add another drizzle of oil if needed and fry the egg until done. Place the egg on top of the tortilla.
Heat a couple of ounces of the salsa in the pan, just to warm, and spoon over the egg white and the tortilla.
Sprinkle with cheese of choice and cilantro and serve with avocado on the side.
