Ingredients
- 1 1/2 pounds onions, 4 large; sliced as thinly as possible
- 1/3 cup olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1/2 teaspoon curry powder
- 1/2 cup golden raisins
- salt and pepper

Preparation
Step 1
1. Saute onions in oil until coated, about 1 minute. Lower heat and cover, cook 10 minutes.
2. Add 1 tbsp vinegar, cover and simmer another 10 minutes. Add the rest of vinegar; cover and simmer another 10 minutes. Onions should be tender and a nice golden hue.
3. Uncover and cook over high heat until liquid is evaporated. Add spices and raisins, simmer just to cook the spices a bit. Season.
Easy and delicious - a bit sour and tart with the sweetness of the raisins. And cheap!
