- 1 cup oats
- 2 cups buttermilk
- 1/2 cup packed brown sugar
- 4 tablespoons butter, melted
- 1 large egg
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup raisins, optional

Preparation
Step 1
1. In a small bowl, combine the oats and the buttermilk. Cover and refrigerate overnight.
2. Preheat the oven to 425 degrees F.
3. In a large bowl, combine the buttermilk and oat mixture, brown sugar, butter, egg, baking powder, baking soda, and salt. Gently stir in the flour and raisins.
4. Scoop into 12 greased muffin cups and bake for 20 minutes, until the tops are light golden brown and a cake tester inserted in the center comes out clean. Remove from the oven, let cool for 5 minutes on a rack, then turn out of the pans to finish cooling.
You'll need to plan ahead, just a little, since the oats need to soak in buttermilk overnight.
made them with chocolate chips instead of raisins - much better warm than cold or room temperature
