Ingredients
- 12 Large Mushrooms (24oz)
- 2 Tblsp butter or Oleo
- 1 medium onion, chopped fine
- 2 oz pepperoni, diced (1/2 cup)
- 1/4 cup green pepper, finely chopped
- 1/2 cup Ritz round crackers (HiHo)(12 crackers), finely crushed
- 3 Tblsp parmesan cheese
- 1 Tblsp parsley, snipped
- 1/2 tsp seasoned salt
- 1/4 tsp oregano
- Dash of pepper
- 1/3 cup chicken broth

Step 1
Wash Mushrooms, remove stems, chop stems & reserve. Drain Caps on paper towel. Melt butter in skillet; add onion, pepperoni, green pepper, garlic & mushroom stems. Cook till vegetables are tender, not brown. Add cracker crumbs, cheese, parsley , seasoned salt, oregano, & pepper. Mix well. Stir in Chicken broth. Spoon stuffing into mushroom caps, rounding tops. Place caps in shallow baking pan with ¼ inch of water covering bottom of pan. Bake uncovered in 325 degrees, about 25 min or until hot.
