GINGER SESAME CHICKEN BURGERS

Finely minced chicken, green onion, fresh ginger, hoisin sauce and other Asian ingredients are combined in these not-so-typical burgers. You can fry them in a small amount of peanut oil or grill them on the barbecue.

- 1 pound boneless, skinless chicken meat
- 3 green onions, finely sliced
- 1 tablespoon minced fresh ginger
- 1 medium clove garlic, minced
- 1 tablespoon sesame oil 1 tablespoon hoisin sauce
- 1 tablespoon fish sauce
- 1 teaspoon minced fermented black beans
- 1 teaspoon chili flakes
- 1/2 teaspoon sea salt
- 1/2 cup black sesame seeds
- Peanut oil or vegetable oil, for frying

Step 1
1- Mince the chicken in a food processor fitted with a metal blade, taking care not to over process. A meat grinder also works well.
2- Transfer the chicken to a bowl and add the green onions, ginger, garlic, sesame oil, hoisin sauce, fish sauce, black beans, chili flakes and salt. Mix well to incorporate all of the seasonings.
3- Shape the chicken mixture into six patties and then dip both sides of each patty into the sesame seeds.
4- Heat a small amount of peanut oil in a nonstick skillet. When the oil is hot, fry the burgers for about 5 minutes per side, turning once, or until the burgers are cooked through. (For grilling, cook the burgers over medium coals for 4 to 5 minutes per side, turning once, or until cooked through.)
5- Serve on a bun garnished with arugula or on a bed of steamed Chinese greens.
