Holiday Potatoes

Ingredients
- 3 lbs. potatoes, peeled & quartered
- 1/2 c. butter or margarine
- 2 3oz. packages cream cheese, softened
- 1 c. (4 oz.) shredded cheddar cheese (divided)
- 1 2oz. jar diced pimentos,drained
- 1 small green pepper, finely chopped
- 1 bunch green onions, finely chopped
- 1/2 c. grated parmesan cheese
- 1/4 c. milk
- 1 tsp. salt

Step 1
Cook potatoes in boiling water to cover 15 minutes or until tender; drain and mash. Add butter and cream cheese; beat at medium speed with an electric mixer until smooth. Stir in 1/2 c. cheddar cheese and next 6 ingredients; spoon into lightly greased 11x7x1/2 inch baking dish. Cover and chill if desired. Remove casserole from refrigerator and let stand at room temp 30 min. Bake at 350 degrees for 40 min. or until thoroughly heated. Sprinkle with remaining 1/2 c. cheddar cheese; bake 5 min. or until cheese melts. Yield: 8 servings
