Some people call it black bean salsa, some call it texas caviar. Most of our friends simply call it delicious. This stuff is so good that they can eat it by the spoonful, with or without the Scoops Tortilla Chips!

Ingredients

  • 1 can Black Beans, drained and rinsed
  • 1 Can White Corn
  • 2 Avocados, ripe but not too soft- peeled and diced
  • 1/2 - 1 box Grape or Cherry Tomatoes, quartered
  • Juice of one Lemon
  • Garlic Salt to taste

Step 1

Mix all ingredients together, chill and serve with Tortilla Scoops.

Serve immediately or place cling wrap directly on top of ingredients to seal out air, so avocados don't brown, but no need to cover the bowl (see my guacamole tip in other recipe). Refrigerate overnight.
