Flossie’s Pumpkin Seed Breakfast Bars

Ingredients

  • 1/2 c coconut oil
  • 1/2 c honey
  • 1 t vanilla extract
  • 2 1/2 c almond meal
  • 1/2 t sea salt
  • 1/2 t baking soda
  • 1 c unsweetened shredded coconut
  • 1 c pumpkin seeds
  • 1 c sunflower seeds
  • 1/2 c slivered almonds
  • 1/2 c raisins or dried cranberries

Preparation

Step 1

Preheat oven to 350 degrees. In a large bowl, combine coconut oil, honey, and vanilla. Mix in almond meal, salt and baking soda. Add coconut, pumpkin seeds, sunflower seeds, almond slivers, and raisins or cranberries. Stir well. Grease a 9x13 baking dish with coconut oil. Wet your hands and press the dough evenly into the baking dish. Bake 20 minutes. Let pars cool in pan for 2 hours, then cut and serve. Refrigerate to keep bars solid.
