Ingredients

  • 1 T butter or oil
  • 1 c chopped red onion
  • 1 clove garlic, minced
  • 1 16oz canned tomatoes w/ liquid chopped
  • 1 8oz can tomato sauce
  • 1/4 c chopped green chiles
  • 1 t ground cumin
  • Salt to taste
  • 1/2 t oregano
  • 1/2 t chili powder
  • 12 corn tortillas
  • 2 c shredded cooked turkey
  • 3 c grated Monterey Jack cheese
  • 1 c sour cream

Preparation

Step 1

Heat butter in saucepan and sauté onion and garlic. Add next 7 items and simmer 20 minutes. Dip each tortilla in tomato mixture to soften. Place shredded turkey and cheese on each tortilla. Rollup, and place seam-side down in baking dish. Blend sour cream into tomato mixture and pour over enchiladas. Sprinkle w/remaining cheese, cover, and bake 30 minutes at 350 degrees.
