TURKEY ENCHILADAS

Ingredients
- 1 T butter or oil
- 1 c chopped red onion
- 1 clove garlic, minced
- 1 16oz canned tomatoes w/ liquid chopped
- 1 8oz can tomato sauce
- 1/4 c chopped green chiles
- 1 t ground cumin
- Salt to taste
- 1/2 t oregano
- 1/2 t chili powder
- 12 corn tortillas
- 2 c shredded cooked turkey
- 3 c grated Monterey Jack cheese
- 1 c sour cream

Preparation
Step 1
Heat butter in saucepan and sauté onion and garlic. Add next 7 items and simmer 20 minutes. Dip each tortilla in tomato mixture to soften. Place shredded turkey and cheese on each tortilla. Rollup, and place seam-side down in baking dish. Blend sour cream into tomato mixture and pour over enchiladas. Sprinkle w/remaining cheese, cover, and bake 30 minutes at 350 degrees.
