Greek Roast Chicken Oregano

Ingredients
- 1 roasting chicken, 3-4 lbs
- 1/4 c. olive oil
- 2 1/2 lemons
- 2 tsp oregano
- salt and freshly ground pepper
- potatoes, cut up (enough for 4 people)

Step 1
Rinse and dry chicken. Season inside and out with salt and pepper. Whisk the olive oil, juice from 1 1/2 lemons and 1 1/2 tsp oregano, brush over chicken. Put lemon rinds inside chicken. Cut up potatoes and season with salt and pepper and the juice of 1/2 lemon and some olive oil. Put potatoes in shallow roasting pan with chicken. Roast at 350 for 1- 1/4 hours basting every 20 minutes.
When done sprinkle chicken with remaining oregano and squeeze half a lemon over it.
