Split Pea and Ham Hearty Soup

This recipe is inspired by Christmas Dinner Ham. The key for this recipe is the smoked ham.
No salt is needed in this recipe. The smoked ham provides enough flavor.
Serve with rustic bread and white wine.

Ingredients
- 1 ham bone
- 2 lbs. cut-up smoked ham into bite-sized pieces
- 1 tbs canola oil
- 1 package dried split peas
- 1 cup chopped sweet onion
- 2 cups chopped baby carrots
- 2 cups potatoes (cut into bite-sized pieces)
- 1 rib of celery cut into small dice
- 1 bay leaf
- 1 clove garlic, minced
- pepper
- chicken stock to cover

Preparation
Step 1
In a dutch oven on medium-high heat, saute onions in oil. Add split peas, bone and ham.
Add enough chicken stock to cover and bring to a boil. Lower heat to medium and let cook for about 10 minutes.
Add carrots, celery potatoes, garlic and bay leaf. Add pepper to taste.
Cover and cook about 2 hours or until vegetables are soft.
Add more stock as needed to cover.
Soup should thicken up and vegetables should be soft.
Remove bay leaf prior to serving.
