Cranberry Mandarin Walnut Brown Rice Salad 1 Picture

Ingredients

  • 2 cup(s) cooked brown rice
  • 1/2 cup(s) dried cranberries, sweetened
  • 11 oz canned mandarin oranges in light syrup, drained
  • 1/2 cup(s) chopped walnuts
  • 2 medium scallion(s), chopped
  • 2 Tbsp vinegar, preferably sherry vinegar
  • 2 tsp olive oil
  • 1/2 tsp table salt
  • 1/4 tsp black pepper, ground

Step 1

In a large bowl, combine rice, cranberries, oranges, walnuts and scallions. Toss to combine.

In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing mixture to rice mixture and toss to combine.

Yields about 2/3 cup per serving.
