Ingredients

  • DRESSING:
  • 3 Tbsp red wine vinegar
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp water
  • 4 tsp honey
  • 1/4 tsp toasted sesame oil
  • SALAD:
  • 1/4 medium jicama, peeled and cut into matchsticks (about 1 cup)
  • 1 cup(s) snow peas, cut into thin strips
  • 2 medium carrot(s), shredded
  • 1 cup(s) romaine lettuce, coarsely shredded
  • 1 tsp sesame seeds

Preparation

Step 1

In a salad bowl, combine jicama, snow peas, carrots and lettuce; toss gently.

In a cup, stir together vinegar, soy sauce, water, honey and sesame oil.

Pour over salad; toss and sprinkle with sesame seeds.

Yields about 1 cup per serving.
