Ingredients
- 2 T. Olive Oil
- 1 Red Onion, chopped
- 1 lb. Bacon, chopped
- 1 Bag Spinach
- 8 oz. Mozzarella Cheese
- French Bread Loaf

Preparation
Step 1
Saute in oil, red onion & bacon until onion is tender & bacon is crisp. Transfer with a slotted spoon to a paper towel.
Put spinach in pan with remaining juices, turn to low, and it will wilt in about 3 minutes.
Remove from pan & combine with onions & bacon. Put mozzarella on french bread and top with bacon mix.
Put in the oven on broil for a few minutes.
