Sweet Cherry Pie

This recipe is originally from Food and Wine using sour cherries. Though, king or bing cherries taste great.

Ingredients
- 2 lbs sweet cherries (bing or king)
- 1 1/2 cups sugar
- 1/4 cups cornstarch
- 1 tbs fresh lemon juice
- pinch of salt

Preparation
Step 1
Preheat oven to 375 degrees.
Pit cherries and place in bowl.
Mix in sugar, cornstarch, lemon juice and salt.
Place in pie dough-lined pie plate.
Brush overhang of dough with water.
Top with top pie dough round (solid or lattice).
Seal edges together.
Trim edges and fold under. Crimp.
Lightly brush top with water and sprinkle with sugar.
Cut a few slits for steam to escape.
Bake until bubbly and crust is golden, about 2 to 2 1/4 hours.
Cover edges of pie if darkens.
Let cool for 5 hours at room temp. before serving.
