Ingredients
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1-2 parsnips, chopped
- 1 roaster chicken carcass
- 2 bone marrows - (drizzle with olive oil and bake for 20 min for 400°)
- 1-2 tbs Kosher salt
- 1 tbs apple cider
- 1-2 tbs Turmeric
- 1 tbs ginger

Preparation
Step 1
Put everything in 12 qt pot and fill up to 10 qt mark. Boil then simmer 12-18 hours - if overnight, I turned off and put lid on - then in the morning, bring to a boil again and then simmer remaining time. Put through a metal sieve and put broth in fridge. Skim fat. Then use cheesecloth and strain again.
