Ingredients

  • Topping:
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tsp vanilla
  • 4 tbsp vegetable oil
  • 3 peaches, peeled and diced
  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup flour
  • 1/4 cup sugar
  • 1/4 tsp cinnamon
  • 2 tbsp butter, cold

Preparation

Step 1

1. Preheat oven to 400ºF. Grease 12 count muffin pan.

2. In a medium size bowl combine egg, sour cream, milk, vanilla, and oil. Mix well. Stir in peaches.

3. In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Mix well. Add peach mixture and stir until just moistened. Fill muffin cups.

4. In a separate bowl combine topping ingredients using a pastry cutter. Sprinkle the topping over the batter. Bake 30-35 minutes.

Notes: used light sour cream, half splenda, added about 3 tbsp softened almond paste, added about 2 tsp cinnamon. Left off streusal - just topped with demerrera sugar and a bit of almond paste, sprinkling of cinnamon.
