Popcorn: Chocolate Peanut Butter Popcorn

Ingredients
- 10 cups popcorn (or 8 oz bag of puff corn)
- 1/2 cup cashews, optional
- 1/2 cup butter
- 1/4-1/2 cup creamy peanut butter
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1 tsp. baking soda
- 1 teaspoon vanilla extract
- 8 ounces semisweet chocolate, finely chopped

Preparation
Step 1
Spread out the popcorn and cashews on a large baking sheet. In a saucepan, combine the butter, brown sugar and corn syrup. Bring to a boil and cook for 2 minutes; remove from heat. Carefully, add the peanut butter and vanilla. Stir until the peanut butter is melted, then add the baking soda. Working quickly, pour the mixture over the popcorn and cashews, and use two rubber spatulas to evenly coat the popcorn.
Pour peanut butter mixture over popcorn and stir until mixed. Place in a 250° oven for 30 minutes. Stir at least every 10-15 minutes. Remove from oven and pour on waxed paper. Break apart.
Fill a sauce pot halfway up with water; set over medium heat and bring to a simmer. Turn the heat down to medium-low. Add the chocolate to a glass bowl and place the bowl over the pot of simmering water. Melt the chocolate, stirring occasionally.
Using a spoon or spatula, drizzle the popcorn with the chocolate.
