Incidentally, I have to modify this recipe a bit. Because I was having a problem with the burgers being a little too "wet," I use 3T water instead of 1/4 cup, and add 1/4 cup sunflower seeds to the food processor for each batch. I also bake these for 30 minutes on each side, instead of 20-25.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1/2 c. chopped onion
  • 1/2 c. chopped mushrooms
  • 1/3 c. old fashioned oats
  • 2 T flaxseed, ground
  • 1/4 c. sunflower seeds
  • 3 T water
  • 1/4 c. tomato paste
  • 1 T chili powder
  • 1 T cumin
  • 1 T nutritional yeast
  • 1 T balsamic vinegar
  • 1 T Mrs. Dash's, your choice of flavors

Preparation

Step 1

Preheat oven to 350 degrees.

Combine flaxseed and water in a small bowl. Set aside until gelled, about 10 minutes.

Process all ingredients in a food processor until slightly chunky, about 30 seconds.

Using a 1/3 c. measuring cup, scoop out bean mixture onto a baking sheet lined with parchment paper. Tap down into desired shape and thickness with the underside of the measuring cup. Bake 30 minutes on each side.

Makes about 7 burgers.
