Ingredients

  • 4 and a half oz(125g)light soft brown sugar.
  • a 170g tin of evaporated milk.
  • 125 g dark chocolate(50-55% cocoa solids)broken into small pieces
  • 2 oz(50g)butter.
  • 2 drops of vanilla extract.

Preparation

Step 1

Combine the sugar and evaporated milk in a heavy saucepan.

Place the pan over a low heat and allow the sugar to dissolve,stirring frequently.When all of the sugar has melted,bring the mixture to the boil and simmer gently for 6 minutes-this time WITHOUT stirring.

Take the pan of the heat,stir in the broken chocolate and keep stirring until the chocolate has melted.

Finally stir in the butter and vanilla extract until you have a smooth mixture.Transfer to a bowl,cool then cover for about an hour until it has thickened to a spreadable consitstancy.
