Ingredients
- 10-12 sm. redskin potatoes
- 1/2 cup diced sweet onions
- 3 TBL. extra virgin Olive Oil
- 1 Tbl. balsamic vinegar
- 1/4 tsp sea salt
- 1/4 tsp. pepper
- 2 TBL. rosemary
- 2 cloves garlic minced
- 2 Tbl. chopped fresh parsley (optional)

Preparation
Step 1
preheat oven to 400*
in large bowl, mix all ingredients except parsley, add potatoes and toss until well coated, place in single layer on baking sheet. bake for 25 minutes. remove from oven turn as needed. return to oven and bake until golden and tender. garnish with parsley if desired.
