Ingredients

  • 3 Pounds Swiss Steak, Top Round, Rump, Bottom Round or Chuck Roast.
  • 1 tbs oil
  • 1/4 cup soy sauce
  • 1 cup prepared coffee
  • 2 bay leaves
  • 1 clove garlic minced
  • 1/2 tsp oregano
  • 2 onions sliced
  • Additional Soy Sauce and coffee as needed.

Preparation

Step 1

Preheat oven to 300 degrees. Heat oil in skillet on high, sear roast on both sides. Meanwhile, in large roasting pan combine soy sauce, coffee, bay leaves, garlic, oregano and one of the onions. Transfer meat to roasting pan. Top with second onion. Cover and bake for 3 1/2 to 4 hours. Baste with pan juices. If liquid begins to boil away add another cup of coffee and a liberal splash of soy sauce. You may need to repeat there should be quite a bit of liquid.
Cut the meat in thin slices and serve with pan juices.
