Chicken Marsala Spaghetti

I created this recipe, like most are created, based on what I had in the kitchen at the time.

Ingredients
- 3 boneless Chicken Breasts, Cut in small pieces
- 5-6 Sun-dried Tomatoes, sliced
- 1/2 tsp. Red Pepper Flakes
- 1 1/2 cups Marsala wine
- 1 1/4 cup Heavy Cream
- Salt and Black Pepper
- 1/2 tsp. dried Basil
- 1 tsp. Garlic Powder
- 1 lb. Thin Spaghetti
- 1/2 Red Bell Pepper, sliced
- 1 Sweet Onion, thinly sliced
- 5-6 Crimini Mushrooms, sliced
- 1 Tblsp. Olive Oil

Step 1
Place cut up chicken in a bowl and add ½ cup Marsala. Then season with salt, pepper, garlic powder and red pepper. Coat well and let set for 15 minutes. Slice onion, mushrooms, tomatoes and bell pepper while you wait. Heat olive oil in a large skillet, add chicken to brown. When chicken is done remove from the pan and add onions and bell pepper and cook until tender. Season with salt and pepper. Then add mushrooms. Cook another minute and add other cup of wine and cook another 2 minutes. While veggies are cooking, boil pasta according to package directions. Add heavy cream and ½ cup of parmesan. Season with salt and pepper to taste. Add basil and return chicken to sauce. Toss pasta and serve.
