TOMATO*****Open-Faced Bacon, Tomato and Avocado Sandwich 1 Picture

Ingredients

  • 3 slices whole grain or marble rye bread, halved
  • 1 tablespoon Hellman's mayo
  • 1 teaspoon Sriracha Mayo
  • 1/2 to 1 teaspoon maple syrup (judge by consistency)
  • 1/2 teaspoon dijon or maple dijon mustard
  • 1/4 ripe but firm avocado, thinly sliced
  • 1 large tomato, sliced
  • 6 slices microwave bacon, halved

Preparation

Step 1

Toast bread to desired level.

Combine mayos, mustard and syrup and spread evenly over each slice of bread.

Top with thinly sliced avocado and tomato and salt and pepper.

Microwave bacon until hot and top each piece of sandwich with two halves, criss-crossed, and serve.

If you had sprouts of any kind they would go well between the tomato and avocado.
