Ingredients

  • 1 pound Costco baby carrots with tops, halved
  • 1 tablespoon oil
  • 1 tablespoon maple syrup
  • 1/4 tablespoon grainy mustard
  • 1/4 tablespoon dijon mustard
  • 1/4 tablespoon white miso paste
  • 1/4 tablespoon rice vinegar
  • 1 teaspoon soy sauce or kecap manis
  • 1 small clove garlic, grated
  • 1 sprig each rosemary and thyme, removed before serving (forgot both)
  • 1 tablespoon chopped fresh dill or parsley, to garnish (ditto)

Step 1

Combine sauce ingredients in a small bowl.

Toss the carrots in the sauce mixture in a ziplock bag with the herb sprigs and refrigerate overnight. Arrange in a single layer on a baking sheet and bake in a preheated 400F oven until tender and lightly golden brown, about 20-30 minutes, turning half way through, if needed. Sprinkle with the chopped fresh herbs and serve.
