CARROTS****Maple Dijon Roasted Carrots

26/09/15 - VVG for both. Dan complimented. I used 3 medium sized regular carrots (8 oz.) which I sliced on the diagonal, and this quantity of the other ingredients.

- 1 pound Costco baby carrots with tops, halved
- 1 tablespoon oil
- 1 tablespoon maple syrup
- 1/4 tablespoon grainy mustard
- 1/4 tablespoon dijon mustard
- 1/4 tablespoon white miso paste
- 1/4 tablespoon rice vinegar
- 1 teaspoon soy sauce or kecap manis
- 1 small clove garlic, grated
- 1 sprig each rosemary and thyme, removed before serving (forgot both)
- 1 tablespoon chopped fresh dill or parsley, to garnish (ditto)

Step 1
Combine sauce ingredients in a small bowl.
Toss the carrots in the sauce mixture in a ziplock bag with the herb sprigs and refrigerate overnight. Arrange in a single layer on a baking sheet and bake in a preheated 400F oven until tender and lightly golden brown, about 20-30 minutes, turning half way through, if needed. Sprinkle with the chopped fresh herbs and serve.
