  • 1 C flour
  • 1 C whole wheat pastry flour
  • 3/4 C sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 egg
  • 3/4 C orange juice
  • 1/4 C canola oil
  • 1 T grated orange peel
  • 1/2 C fresh or frozen blueberries
  • 1/4 C chopped pecans

Preparation

Step 1

- Combine flour, sugar, salt, baking soda
- In small bowl, whisk egg, OJ, oil and peel; stir into dry ingredients just until moistened; fold in blueberries and pecans
- Place in two sprayed 5 3/4 X 3 X 2 in pans. Bake at 350 for 40 - 45 min until tester comes out clean; cool 10 min. before removing from pans to wire rack
